Job description:

We are looking for a Sous Chef to join our small skilled team. We make food from raw seasonal ingredients to two rosette / Michelin Bib Gourmand standards. Therefore we are looking for an experienced creative Chef who has something to contribute to our menu. If you are ambitious, want to learn new skills but have your own ideas which you wish to develop with our Head Chef, Andrew Cook then we could be the place for you.
Assist the Head Chef in the supervision, control and running of the kitchen and ancillary services, to the specified standards of the hotel and department, adhering to company and statutory regulations.

We are located in Fort William overlooking Loch Linnhe 'The Outdoor Capital of the UK' so this post is ideal for a person who likes the outdoor life but also wants to develop as a Chef.

Main duties and responsibilities

¨ Have a full operational knowledge of the preparation, production, presentation and service methods of all food items served in the establishment.

¨ Help plan, organise and cost daily, periodic, special, vegetarian and function menus, in co-operation with the Head Chef. Assist in the development of new items and dishes.

¨ Order and receive food and non-food items in accordance with company purchasing policy and as directed by the Head Chef.

¨ Allocate tasks to subordinate kitchen, production and support staff and check they have been carried out effectively.

¨ Ensure that all items and dishes are prepared and served according to standards agreed by the Head Chef and GM.

¨ Assist the Head Chef in retaining staffing levels. Help prepare work rotas/holiday schedules.

¨ Keep cleaning level to a high standard

Waiting staff

​​Salary: 9.00 per hour

Duration: Part time

Hours: 15-25 per week

Days: 3-5 days per week

Job description:

We are looking for friendly, customer focused staff who want to give excellent service. Ability to work in a team, maintain high standards and ensure guests are well looked after. Punctuality and reliability essential available for waiting staff in award winning small hotel and restaurant.

3 to 5 days per week 15 to 25 hours per week.

Dinner service - greet guests, advise on menu and take orders, serve food and alcohol, clear tables, prepare drinks and set up for breakfast service, take payments. Dinner Shifts start at 6.00/6.30pm to around 11.0/11.30pm 

 

And some extra shifts possible available:
Breakfast service - greet guests, advise on menu and take orders, serve food and hot drinks, clear tables and set up for evening service.

Breakfast Shifts start at 7.30 am to 10.30am

Must be over 18 to serve alcohol.

Chef de Partie / Assistant Chef

Assistant Chef to support the work of the kitchen.
The Lime Tree is a multi-award winning restaurant whose food service philosophy is that exciting creative dishes should be prepared from raw, local, seasonal ingredients made into something special by skilled Chefs. Most of our dishes are made here by our team, led by Andrew Cook.
Therefore, to work in our kitchen you need to be the sort of ambitious Chef that has cooking skills, knowledge, enthusiasm, creativity and excited about cooking. If you have those rare qualities then the Lime Tree is a great place to work, develop your skills and reputation as a Chef.

However, we will consider new Chefs who share our ambition for food service. You will be supervised initially to ensure quality standards are reached.

KP / Kitchen Porter

​​Salary: 9.00 per hour

Duration: Part time

Hours: 30-42 per week

Days: 5 days per week

Job description:

We are looking for a Kitchen porter to join our small skilled team.

As a member of our kitchen team, you will be responsible for maintaining the cleanliness & efficiency of the dish-washing area and assisting with the preparation of food items.

5 days per week morning (9.30am - 11am) & evening shifts (5pm - 11pm)

It`s essential you will maintain the cleanliness of the kitchen and adhere to all aspects of licensing law, trading standards, food hygiene and health & safety.

Successful candidates will need to display excellent communication skills, be professional, well presented and able to communicate clearly with people at all levels. Conversational English is essential and you`ll have to be confident, friendly and reliable to succeed with us.
